I have found the way to produce the perfect turkey. This year I was able to replicate a turkey that I made about four years ago. This turkey was moist and flavorful and I am normally not a turkey fan. Here is what we did and I am open to any suggestions you may have.
1. We didn't defrost the turkey until the night before. We left it out on the counter for about 12 hours (this was a 20lb turkey so I think lighter it is the less time you should leave the turkey out).
2. I generously sprinkled salt and pepper on the turkey.
3. Added 1/2 cup to the bottom of the pan.
4. Every 30 minutes I would baste the turkey.
5. THERE SHOULD BE AT LEAST 1/2 CUP OF WATER AT THE BOTTOM OF THE COOKING PAN AT ALL TIMES!!
6. If it gets too brown on the breast, wrap the turkey in foil.
